I had this on the PS4 and after feeling somewhat deflated after buying Mario Kart 8, bought it for the Switch since, of the two, I still prefer this title.
First off, don't buy this for anyone who wants all of the cars that the base game has, especially if the person is a child, as they will be disappointed if left to their own devices.
I highly recommend watching reviews on the game before buying - I did before buying the PS4 version.
Graphically, not as sharp as the PS4 version (like that's a surprise) but if games were solely about how pretty something looked, then it kinda defeats the purpose of a game, doesn't it?
Gameswise, however, it's the same experience as on the PS4, albeit hampered by Nintendo's overzealous parenting when it comes to discussing the game via the console with mates rather than having to chase down region-specific forums...

What I like game-wise here is split-screen local (2-player only so MK8 wins hands-down there) but when playing your own tracks (you knew it had a track editor and there's a "paint-shop" editor as well, yeah?) it's a bummer that local two-player is just that - no AI cars. Presumably because a console has enough dealing with user tracks which no game designer in the right mind would ever conceive of, let alone having to control 10 other vehicles.
The upside is that the user-designed tracks may not only be shared online (as are your car repaint and decal jobs) but may also be raced online although I have yet to do this to see if it's merely randoms or if indeed Friends Codes may be utilised.
I haven't checked the photo/video editor in the Switch version yet (curse you ACNH, the great time-sick that you are!) but the photo editor in the PS4 version was pretty sweet - similar to that of ACNH with the cool filters but the camera may be rotated around nearly all sides of the vehicle. If you like killing time with cool game-action shots, that's something to check for here.
Downside? If the collector in you is stirred by some of the vehicles, such as the DC Comics-themed vehicles, you're not likely to get anything outside of the Batman-themed DLC. Once a season-pass has had it's run, that's it. Finito, Benito.
Which seems utterly ridiculous when they could still be making more money per vehicle (not like it's expensive) post-season than the reasonable price of a grindfest (to me - see next paragraph) season pass.
According to most video reviews I'd watched before purchase, playing with the AI set to anything above Easy difficulty is "challenging". I wouldn't know. For most of my gaming life, I've been adulting - y'know, working, parenting, etc. - so anything higher than "Don't Hurt Me" mode rarely, if ever, sees the light of day...
What's to like about it? It's not a hard-core sim and it's not Mario Kart. Being Hot Wheels, it has some goofy designs - if you've seen the blister-packs in Kmart then there's a good chance that half of them are in-game - but it also has some "real-world" makes and marques, and as pay-for DLC, IP tie-ins (DC and Warner Bros), and MONSTER TRUCKS!!
What's not to like about it? If you like hard-core racing sims, or Mario Kart, then this may not float yer boat.
The eShop seems to have the various edtion levels on sale at different times so keep an eye out if, after doing some research, you think that this may be of interest.
